Healthy Marry Me Chicken Recipe (Dairy-Free & Whole30)

This healthy spin on the viral "Marry Me Chicken" is creamy, flavorful, and tastes so indulgent you'd never guess it's dairy-free. It comes together in under 30 minutes, making it perfect for a quick weeknight dinner or a cozy date night in. One taste and it'll be love at first bite!
Season the chicken thighs with salt and pepper. Heat the oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes per side, or until golden brown. Once done cooking, transfer the chicken to a plate and set aside.
While the chicken is cooking, combine the coconut milk, chicken stock, lemon juice, nutritional yeast, tapioca starch, pepper flakes, thyme, salt, and pepper in a small bowl. Stir and set aside.
Add the garlic to the pan and cook for about 30 seconds or until fragrant. Add a splash of water or broth and deglaze the pan, scraping any brown bits stuck to the bottom with a wooden spoon.
Reduce the heat to medium-low and pour in the mixed sauce ingredients along with the sun-dried tomatoes. Simmer for a few minutes, stirring occasionally to allow the sauce to thicken.
Return the cooked chicken to the pan with the cream sauce. Allow it to cook until the chicken reaches an internal temperature of at least 165°F.
Once the chicken is done, you’re ready to serve! Garnish with some chopped fresh basil and serve warm.
Notes
If you're doing Whole30, be sure to read the sun-dried tomatoes label carefully. Look for products packed in approved oils and free of added sugars. Trader Joe's has some jarred ones packed in olive oil that are already chopped. They're delish!
